About Us

Hey! We're Trevor and Jules, and together we created Longshot Coffee Roasters. Located in Waco, TX, we believe that freshly roasted coffee is an experience - from the moment the beans hit our roaster to the aroma that fills your cup, we're committed to bringing you the finest coffee.

Humble Beginnings..

We began our coffee journey by roasting green coffee in a flour sifter on our over-priced apartment balcony in Austin, TX

After that we began roasting on a Hive Hand Roaster, this is where we began making coffee that we shared with others

We moved on from the flour sifter to a popcorn popper we thrifted from Goodwill, this was a total mess!

We wanted a larger capacity, so we moved to the SR800, and rarely bought coffee elsewhere again

Our current roasting vessel (and baby) is the Aillio Bullet. We have been roasting on this beast of a machine since March of 2023, and this is when we decided that we were going to go public with a product line!
